Bunny Chow Recipe:
Ingredients:
- 1 large loaf of unsliced white bread (round or oblong)
- 500g (1 lb) boneless chicken or beef, cubed (you can also use lentils or chickpeas for a vegetarian option)
- 2 tablespoons vegetable oil
- 1 large onion, finely chopped
- 2-3 cloves garlic, minced
- 1 tablespoon curry powder (adjust to your spice preference)
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon turmeric powder
- 1 teaspoon paprika
- 1 teaspoon garam masala (optional)
- 1 can (400g) chopped tomatoes
- 1 cup vegetable or chicken broth
- Salt and pepper to taste
- Fresh coriander (cilantro) leaves, chopped (for garnish)
Instructions:
- Cut the top off the loaf of bread and set it aside. Hollow out the inside of the loaf, leaving about a 1-inch thick crust around the edges to form a bread bowl. Save the removed bread to serve with the curry.
- In a large pot or saucepan, heat the vegetable oil over medium heat. Add the chopped onions and sauté until they become soft and translucent.
- Stir in the minced garlic and cook for an additional minute until fragrant.

- Replace the top of the loaf and serve the Bunny Chow garnished with chopped fresh coriander leaves.
