Ingredients:
- 1 kg (2.2 lbs) lamb or mutton, cut into pieces
- 2 tablespoons vegetable oil
- 2 onions, finely chopped
- 2-3 cloves garlic, minced
- 2-3 tablespoons curry powder (adjust to your spice preference)
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon turmeric powder
- 1 teaspoon paprika
- 1 kg (2.2 lbs) ripe tomatoes, chopped (or 2 cans of chopped tomatoes)
- 2 cups beef or vegetable broth
- 2-3 potatoes, peeled and cut into chunks
- 2-3 carrots, peeled and sliced
- Salt and pepper to taste
- Fresh parsley or coriander leaves, chopped (for garnish)
Instructions:
- In a large pot or Dutch oven, heat the vegetable oil over medium heat. Add the chopped onions and sauté until they become soft and translucent.
- Stir in the minced garlic and cook for an additional minute until fragrant.
- Add the lamb or mutton pieces to the pot and brown them on all sides.
- Sprinkle the curry powder, ground cumin, ground coriander, turmeric powder, and paprika over the meat. Stir well to coat the meat with the spices.
- Pour in the chopped tomatoes (with their juice) and the beef or vegetable broth. Bring the mixture to a simmer.
- Cover the pot and let the Tomato Bredie simmer on low heat for about 1.5 to 2 hours, or until the meat is tender and the flavors have melded together. Stir occasionally and add more broth or water if needed to prevent it from becoming too dry.
- Add the potato chunks and sliced carrots to the pot. Continue to simmer for an additional 30-40 minutes or until the vegetables are cooked through.
- Season the Tomato Bredie with salt and pepper to taste.
- Serve the stew hot, garnished with chopped fresh parsley or coriander leaves.
