A Traditional South African Tomato and Lamb Bredie

 Tomato Bredie:

Ingredients:

  • 1 kg (2.2 lbs) lamb or mutton, cut into pieces
  • 2 tablespoons vegetable oil
  • 2 onions, finely chopped
  • 2-3 cloves garlic, minced
  • 2-3 tablespoons curry powder (adjust to your spice preference)
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon turmeric powder
  • 1 teaspoon paprika
  • 1 kg (2.2 lbs) ripe tomatoes, chopped (or 2 cans of chopped tomatoes)
  • 2 cups beef or vegetable broth
  • 2-3 potatoes, peeled and cut into chunks
  • 2-3 carrots, peeled and sliced
  • Salt and pepper to taste
  • Fresh parsley or coriander leaves, chopped (for garnish)

Instructions:

  1. In a large pot or Dutch oven, heat the vegetable oil over medium heat. Add the chopped onions and sauté until they become soft and translucent.
  2. Stir in the minced garlic and cook for an additional minute until fragrant.
  3. Add the lamb or mutton pieces to the pot and brown them on all sides.
  4. Sprinkle the curry powder, ground cumin, ground coriander, turmeric powder, and paprika over the meat. Stir well to coat the meat with the spices.
  5. Pour in the chopped tomatoes (with their juice) and the beef or vegetable broth. Bring the mixture to a simmer.
  6. Cover the pot and let the Tomato Bredie simmer on low heat for about 1.5 to 2 hours, or until the meat is tender and the flavors have melded together. Stir occasionally and add more broth or water if needed to prevent it from becoming too dry.
  7. Add the potato chunks and sliced carrots to the pot. Continue to simmer for an additional 30-40 minutes or until the vegetables are cooked through.
  8. Season the Tomato Bredie with salt and pepper to taste.
  9. Serve the stew hot, garnished with chopped fresh parsley or coriander leaves.

Tomato Bredie is a comforting and flavorful stew that pairs perfectly with rice, mashed potatoes, or crusty bread. Enjoy this traditional South African dish and savor the rich taste of slow-cooked goodness!
